Hey there, blog friends! I hope your Summer has been going fabulously, and you're indulging the things you love. My Summer has consisted of a lot of the same routine: spending time with loved ones, lots of travel, decluttering my apartment (cannot wait to hibernate this Fall & Winter), and of course, all while maintaining my 9-5! It's a lot of juggling, and moving parts, which is why I have leaned into routine a lot this Summer, that's a blog post in itself!
I wanted to pepper in a blog post (pun intended) with my favorite office salad I've been making recently. It's a current favorite hype fixation meal of mine, and I wanted to pass along the ingredients to my blog readers. Notice how I did not say recipe, because I truly think you can make a salad with anything you're craving at the moment, rather I want this recipe to inspire alllll the yummy office salads to come.
What you'll need:
Baby Crispy Green Leaf, from Little Leaf Farms. Let me clarify - you can use quite literally any greens you want! I personally find this lettuce to be so crispy, and fresh that it's the perfect crunch to your salad.
Cucumbers, galore. If you know me, you know I adore cucumbers. Cucumbers are my absolute favorite healthy snack. At the beginning of the week, I often pick up a pack or two of mini cucumbers, peel, and slice them and have them available throughout the week - to prepare a cucumber salad, or to throw into existing meals.
Tomatoes. Cut, and diced! I adore tomatoes, similar to cucumbers, I'll often throw some cucumbers, and tomatoes in a bowl throughout the week with some olive oil, salt, and pepper for a quick snack.
Olives. I typically only use either black, or manzanilla for my salads, which is why they're always in my pantry. The stuffed blue cheese are strictly saved for post work martini's after a long day.
Corn. I've been told that this is an odd choice to throw into my salad, however I find it to be the best additive! Fresh corn is preferred, but let's be real. Most of the time, the corn in my salad is canned sweet corn, that I strain, and rinse.
Capers. Oooof, this is where you may differ, and skip out on this choice. But, if you're a savory/salty lover, adding capers to your salad is chef's kiss!
Cheese. Notice how I didn't specify? I'm a lover of all cheese (cue the new RHONY cheese fight in episode one). My go to cheeses for this salad however are two: feta, or mozzerlla.
Seasoning. Time to have fun and throw some seasoning onto the salad, this is the concoction I use: salt, pepper, onion powder, garlic powder, and a TINY bit of Goya's 'Salad & Vegetable'
Dressing. For dressing, it's really a you option, however, I will say that the Bolthouse Farms Avocado Green Goddess dressing is such a nice topper for a tiny bit of sweet and savory (it's a yogurt based dressing, so the sweetness of the dressing and the corn compliments the saltiness of the salad perfectly).
Salads are always my favorite snack/meal to throw together - and I contribute that to my impeccable OCD that begins at the beginning of the week when I go grocery shopping. After I'm home, and all my food is put away, I'll take my produce out, wash it, and prepare it. From dicing my cucumbers, and tomatoes, to putting my corn, and olives into containers, this helps me to make a salad quickly, and honestly? I'm more prone to grab some cut up cucumbers rather than chips if they're already cut up and prepared. Rest assured, in my household you'll always have a truly yummy salad.
